One Pot Marry Me Chicken and Noodles

INGREDIENTS
Chicken tenders
AP Rub or (all purpose seasoning)
Avocado Oil
butter
White onion
Cloves garlic, minced
Squeeze of 1 lemon
Tomato paste
Chicken broth
Heavy Cream
2 packs of Momofuku Sweet and Spicy Noodles
Sun-dried tomatoes (optional)
Parmesan cheese
One Pot Meals are Lifesavers
Let’s go baby! First off, season chicken with an AP rub. Add oil to a large pan over medium, high heat. Next, add chicken and sear for 5-8 minutes or until the internal temperature has reached 165 degrees. (I did mine in batches) Remove chicken and set aside.
Lower the heat and add butter and onions. Saute until soft. Stir in garlic and squeeze lemon juice over top. Mix together and cook for another minute until flavors are combined. Add tomato paste and cook until it turns a darker shade of red. Add chicken broth and 2 of the Momofuku Noodle sauce packets. Bring the mixture to a boil and cook for 5-7 minutes, uncovered. Add in the noodles and cook for another 2-3 minutes. Stirring frequently. Remove from heat, add in heavy cream and sundried tomatoes. Finally, add chicken back to the pan and stir to coat. Grab some bowls and enjoy!!
