White Chicken Chili

This slow cooker white chicken chili is the ultimate comfort food and perfect for a cool fall night and Monday Night Football. Remember when I mentioned I wasn’t a huge fan of soup but really fell in love with my tortellini soup? Well, here we go again. I have never liked chili but this recipe, holy smokes. This chili is so smooth, creamy and delicious. 

This white chicken chili is perfect for a crowd or to send over to a friends celebrating a milestone or needing a little love. It is the ultimate comfort meal. Like most crock pot meals, this one is super easy and all you have to do is toss some ingredients into the slow cooker. So let’s get started but first here are a few tips. Make sure you choose thigh meat vs chicken breast, the breast meat shrinks up and isn’t as fatty. Also, rinse and drain your beans before adding them in. 

HOW TO MAKE WHITE CHICKEN CHILI

Get your frying pan and sauté up the onions and garlic in some avocado oil (sub olive oil if needed) over medium high heat. Once the onions are translucent, you are going to dump that into your crock pot. Pour in the lime juice and stir. Next up, add in your chicken broth, diced cooked chicken, beans, corn, green chilis, spices, heavy cream, cream cheese and cilantro. When you add in your cream cheese, break it up into chunks instead of one large cube. Stir everything together until it is all incorporated. Cook on low for 2-4 hours or high for 6-7 hours. Once it is ready, fill up some bowls and top with jalapenos, sour cream, Santa Fe tortilla strips and shredded cheese. You could also top with avocado or green onion. Whatever you choose, make it yours.. the more the merrier.

This white chicken chili soup tastes great all year long. We placed all the toppings on the table and allowed everyone to top their own and make it unique.
